 The three vegan chocolate truffle recipes that follow are easy to make, delicious, and healthier than many such recipes for trifles.  These recipes do no contain any dairy or processed sugar.  If you are carefully following a gluten-free diet, you can substitute gluten-free oat flour.  I think there is something yummy here for everyone! Pumpkin Hermit Baked Porridge

  If you are a fan of hermit cookies with their yummy touch of spice and delightful munchy-crunchiness, you will love this baked porridge for breakfast (or dressed up a little as a dessert).   Ingredients 2 ripe bananas  1/2 cup/115 g pumpkin puree 2 cups/489 ml oat milk or other plant-based milk 2 tablespoons/40 ml. maple syrup 2 cups rolled oats 2 tsp. Pumpkin pie spice 1/2 tsp. baking powder 4 Medjool dates , pitted and chopped Small handful walnuts, chopped Click for Pumpkin Hermit cookie recipe: Method to make  pumpkin hermit porridge: Preheat oven to 350° F/177 C. In a medium bowl mix rolled oats, pumpkin, spice, baking powder and nut and dates. Blend banana  pumpkin, milk, and maple syrup Pour blender mixture over dry ingredients and combine well. Divide evenly among 7 or 8 large muffin cups or ramekins. Bake 25 to 30 minutes or until firm.

Best Roasted Brussels Sprouts and Sweet Potatoes Recipe- Yes, As Good As It Looks!  If you enjoy roasted brussels sprouts, this recipe is one of the best that I have come across.  It is pretty easy to put together in a short time, and makes for a lovely holiday dish or addition to a potluck. I love brussels sprouts-- or teeny cabbages!  And I also love the combination of the slightly bitter brassica with sweet potatoes, that you get in this recipe.  Because, of course, sweet potatoes have that ... um... sweetness that offsets the slight herby bitterness of the sprouts.  The recipe I was inspired by used finely grated lemon zest and thinly sliced scallions... I have substituted my health-promoting whole lemon and garlic puree, that you can learn about and use as well in this recipe-- Chris Wark from Chris Beat Cancer swears that this formulation destroys cancer cells, and really amps up your immunity in general.  Or just go with the lemon zest and thinly sliced scallions. Oat-Whole Wheat Carrot Cake - No Poured Oils, Plant Strong, Egg- and Dairy-Free

Here is maybe the best Carrot Cake (read: virtuously low-fat, sweet, many-textured, moist and tasty to the max) that I have ever baked.  What a bonus that it is healthy!!  I found it so moist, sweeet and flavourful that I believed a frosting would have ruined it... but feel free to go for the traditional (vegan?) cream cheese frosting if you so desire. Lentil Bowl #1: Pineapple Lentils over Coconut Lime Sweet Potato (Vegan, Gluten-Free)

Even if you are not a huge fan of lentils, this particular recipe will answer a deep need on a cool winter's night when you have put out all day for the Man and are just ready for something comforting and satisfying!  It will feed 2 - 4 diners, depending on the hunger and the usual inputs.  I'm calling this Lentil Bowl #1, so expect some more quick and yummy one-dish lentil recipes! The potatoes in the above picture are white 'sweet potatoes' and not the bright orange yams we expect when we say 'sweet potato'.  They have the texture of  sweet potato, and they ARE very sweet (ooze syrup when baked) but they have a more neutral flavour.  Yams work extremely well also, so use either.
