Garlicky Raw Vegan Flax Crackers

The following “raw” flax crackers (they are dehydrated at 115 degrees F. over a lengthy period of time…. until you think they are crisp or chewy enough for you…18-24 hours)  have 6 cloves of organic garlic in them. You can vary that, as you can all the additions to the basic flax seeds. Yeah, I like garlic. I like garlic a lot.  I like its astringent pinnng and its heady fragrance. It’s also very good for you because of the natural antibiotic effects of its constituents. Rice Pasta with Cauliflower Sauce

This delectable garlicky cauliflower sauce over organic rice spaghetti was a most delightful supper one evening at the beginning of the COVID-19 dilemma. It has a lovely creamy mouth appeal but because it has no actual cheese or dairy fat of any kind (only fat would be in the almond milk) it settles lightly on the digestion. Perfect for an evening meal. INGREDIENTS: Large head of cauliflower, broken into florettes with leaves and stem end removed 1 onion, chopped 4 garlic cloves, minced 1 1/2 cups almond milk (unsweetened) 2 tsp. lemon juice, fresh squeezed 1 tsp. fine sea salt black pepper, fresh ground, as desired 4 T. chopped parsley as garnish full box of rice spaghetti (28 oz) or quinoa, rice, etc. Steam the cauliflower over a pot of boiling water, covered, for about 5 - 10 minutes, or in Instant Pot. Braised Red Cabbage over Sweet Potato  I recently purchased Anthony William's Medical Medium Life-Changing Foods: Save Yourself and the Ones You Love with the Hidden Healing Powers of Fruits & Vegetables  and although I am a skeptic around the "medical medium" tag, I was excited by the book's layout.  He introduces what he calls the Holy Four: Fruits, Vegetables, Herbs & Spices, and Wild Foods (Raw Honey being the only departure from the vegan whole foods listed as life-changing). Vegan Spring Frittata

  This "vegan frittata" is a take-off on the Persian egg dish often called "kookoo sabzi" and baked up for the New Year (March 20th or thereabouts) .  The lovely green fresh herbs really celebrate Spring!  I have used some traditional ingredients (the herbs) and some non-traditional ingredients (umeboshi plum vinegar, almond milk, nutritional yeast, and of course, the tofu.)  I think of this as a World Recipe. Ingredients: 2 C. Organic Fresh Parsley , finely chopped 2 C. Organic Fresh Chives, finely chopped 2 C. Organic Fresh Dill, finely chopped 1 tsp. Tamari 1/4 C. Plum Vinegar 2 pkgs.
