Black Bean Mulligatawny Soup

Yummy, delightful black bean mulligatawny soup to serve your family or company on crisp pre-Christmas days. It smells divine! And it is soooo easy to make if you have a good blender! 

 This recipe can be found on the VitaMix site. Yield: 5 cups Prep Time: 5 minutes Cook Time: 7 minutes

INGREDIENTS

Celery & Apple Chutney 

1/2 cup tart apple 

1/4 cup celery 

1 tablespoon fresh cilantro

1 tablespoon fresh lime or lemon juice 

INSTRUCTIONS For Chutney

 Place all ingredients in Vita-Mix container in order listed below

Secure two-part lid. Select VARIABLE, speed #1. 

Turn on machine and quickly increase speed to #4 or #5. 

Run for 5-10 seconds or until ingredients are chopped to desired consistency. If necessary, use the tamper to push the ingredients into the blades while proessing. Do not over mix 

   Black Bean Mulligatawny Soup 

2 cups 480 mL reduced sodium broth or 3 Golden Bouillion cubes/water

14 oz. black beans cooked, drained

 3/4 cup onion 

2 tablespoons 30 mL tomato paste 

1 teaspoon fresh ginger  

1 teaspoon madras curry powder 

1 teaspoon fresh lime  or lemon juice

1 can full-fat Coconut Milk

STOVE TOP METHOD 

for making Soup

1. Stew up the chopped onion and ginger in about a 1/4 cup of water until softened

2. Add in other ingredients EXCEPT lemon/lime and coconut milk.  Cook, occasionally stirring, until "soupy" (beans should be soft and somewhat mushy).

3  Turn off heat and add in coconut milk and lemon or lime juice. Stir to combine.

4. Blend in batches in blender or use an immersion blender to cream.

5. Serve with a garnish of the fresh Chutney.


ViTAMIX METHOD

for making Soup

Put ingredients into Vita-Mix® cannister as they are listed above.

Put your double top securely on. 

Start at Variable/Lowest setting and turn to "10" Variable setting and then flip on to HIGH in one full swoop. 

You may want to rest your other hand lightly on the lid since you are using hot water. 

Run for about 3 minutes. 

You may want to stop machine and use the plunger if there are air pockets or if items are not feeding into the blades. 

Makes 5 cups of fragrant, delicious, nutritious soup (no cholesterol, no visible fats)
