Brain-Boosting Kale and Pinto Bean Soup

This hearty recipe is an adaptation from one of the "Total Brain Chemical Boosting Recipes" in Eric R. Braverman, MD's book, " Younger (Thinner) You Diet: How Understanding Your Brain Chemistry Can Help You Lose Weight, Reverse Aging, and Fight Disease ".   The veggies, herbs and spices in this particular recipe contribute to a balanced mix of important brain chemicals: Dopamine,Acetylcholine, GABA and Serotonin. Braverman explains how a deficit in any of these brain chemicals can affect your health in several ways, and a good balance can help you to be slim, youthful, sharp, and serene, among other desirable features. At this time of the year you can find most of the fresh veggies and herbs either in your garden or at a Farmer's Market!  Method for Making Soup  Put into a high-speed Blender and whirl up: *2 cans organic Pinto Beans (reserve half liquid) In a large wok or pan, for 5 minutes on Medium-High heat, saute the following in 2 tablespoons of  Virgi...

Chickpeas with Penne, Greens, Walnuts and Raisins

I am cooking up and submitting this recipe because I have a library book that has this recipe in it and I want to remember it.  The book is One-Dish Vegan Revised and Expanded Edition: 175 Soul-Satisfying Recipes for Easy and Delicious One-Pan and One-Plate Dinners and I highly recommend it. I do a number of subs for things I don't have in the house/fridge (example, I don't have baby spinach, I would never buy pine nuts, and I don't really like red pepper all that much). I do find, however, that many recipe-makers tend to have a very tasty outcome and that is what I go for! INGREDIENTS: 8 - 12 oz of Penne pasta, uncooked (I am using brown rice penne- gluten-free) 1/4 C. water 5 Garlic cloves, minced 12 oz Baby Kale (or other greens on-hand, such as chard or spinach), chopped coarsely 1/4 tsp Chipotle Pepper powder ( or 1/2 tsp Red Pepper Flakes) 1/2 C. Vegetable Broth (such as Golden Bouillon) 1 15-oz can of Chickpeas or 1 1/2 C. cooked Chickpeas 1/2 C...

Organic Harvest Score Card 2010

Friend Generous Mike's lush organic kale crop This year our older grand- daughter started kinder- garten. After her first day in the system (an hour in a Montes- sori classroom) she announced, "Kinder- garten is fine, Lola. I made lots and lots of friends". And I watch other kids returning to school in their new duds or new post-summer identities, all looking hopeful, with their new backpacks slung over their shoulders. All this hopefulness and optimism for the coming year reminds me of my gardening persona in about May. Any May. I have sprouted new plants, tilled and amended new garden patches, read new advice in books and online. By mid-July (any mid-July) I have pretty much slacked off on the daily 10-minute check for weeds, the necessary watering, the pruning of roses, the pinching off of bolted Cilantro, etc. We travel here and there doing fun summer things. I spend a lot of time on the Internet doing fun writing projects (or just maintaining my su...
