Easy Creamy Celery Soup

Okay, so the above picture of the Easy Creamy Celery Soup looks as if some ink has leaked along the one side of the bowl... well, it's an artistic shadow, and I like it.    This smooth and creamy soup is a wonderful tasty addition to any winter-y day.  Easy to make if you have a blender.  If I use the Instant Pot, I do everything on Sauteé- never even put the lid on the thing.  Done in a jiffy. Rice Pasta with Cauliflower Sauce

This delectable garlicky cauliflower sauce over organic rice spaghetti was a most delightful supper one evening at the beginning of the COVID-19 dilemma. It has a lovely creamy mouth appeal but because it has no actual cheese or dairy fat of any kind (only fat would be in the almond milk) it settles lightly on the digestion. Perfect for an evening meal. INGREDIENTS: Large head of cauliflower, broken into florettes with leaves and stem end removed 1 onion, chopped 4 garlic cloves, minced 1 1/2 cups almond milk (unsweetened) 2 tsp. lemon juice, fresh squeezed 1 tsp. fine sea salt black pepper, fresh ground, as desired 4 T. chopped parsley as garnish full box of rice spaghetti (28 oz) or quinoa, rice, etc. Steam the cauliflower over a pot of boiling water, covered, for about 5 - 10 minutes, or in Instant Pot. La Mousse Végétalien Habitude ('The Usual Vegan Mousse') (gluten-free)

I went into the pantry tonight and found a very over-ripe avocado.  What came to mind? Guacamole? Nope. Chocolate Mousse, of course.  Nothing makes a mousse like avocado.  Especially when you are vegan (all those eggs, you know) or lazy (all those eggs to be beaten up).   And since I'm trying to cut down on refined sugars, I used Stevia (just a packet of "SweetLeaf") and a few maple chips (little pieces of maple sugar) and a few cacao nibs (what are they? little pieces of hardened cacao I guess-- certainly not chocolate chips!)  So here is the easy recipe for the 2 puddings my husband and I enjoyed (and he gets to 'lick out the blender' as well-- without slicing his tongue on the blade I hope).
