Recently I heard that a family member in her early 50s was being seen by a doctor for DVT and that she was hoping that there was a more natural way of dealing with it than the medications her doctor was prescribing. When I had digested this scrap of family ''information,'' I thought about my own lax position (denial, really) and how it would make sense for me to make some changes in my life while I still have some shreds of health and potential fitness. Colcannon (Irish Mashed Potatoes) and Irish Soda Bread (Spelt)

Colcannon is a lovely Irish traditional mix of boiled cabbage or kale along with a root vegetable, usually mashed potatoes, but sometimes turnip, or carrots. Leaks and/or onions, and garlic, are pretty popular additions. Chopped green onions, chives and/or parsley are often used as a stirred-in garnish. I am vegan, so this is a vegan colcannon-- no dairy butter or milk involved. The following are ingredients in the colcannon I made (Missing from the picture are water, garlic, pepper, oil, and fine sea salt): Lovely Colcannon: potatoes, cabbage, leaks, green onions, and parsley INGREDIENTS (2-4 servings) 2 T.  Olive Oil (or water, or coconut oil) 1/2 Cabbage , shredded 2    Leeks , finely sliced (or shredded) 4 cloves minced Garlic 4 C. peeled, diced  Potatoes  (I used yellow flesh Yukon Gold) 1/2 C. Today would have been my Irishy Grandma's 115th birthday. She would have loved these.  Happy St. Paddy's Day!  INGREDIENTS 1 Flax Egg     (1 T (7 g) flaxseed meal + 2 ½ T(37 ml) Water beaten up together in small bowl) 3/4   cup  unsweetened Non-Dairy Milk such as Almond, Hemp or Oat Milk 3/4   cup   spelt flour  1 1/4   cups  U nbleached All-purpose Flour 1   T  B aking Powder 1/4   cup  Maple Syrup 1/2   tsp  S ea Salt 2 T. Caraway Seed 1/4 C. dried Currants 6   Tbsp   room temperature coconut oil  (scoopable, not liquid or frozen) (or vegan butter) Icing: 1 c. Icing sugar 2 T milk 1/4 tsp orange zest.   Method Preheat oven to 400 degrees Farenheit Whisk in bowl: flax egg, non-dairy milk and maple syrup. Set aside. In another larger bowl whisk together flour, baking powder and sea salt. Using a pastry cutter or your fingers, cut in the coconut oil until pea-sized clusters form Spill in caraway seeds and currants Add wet ingredients a
