Yummy 3-Ingredient Organic Breakfast Cookies

Organic Breakfast Cookies (rainbow effect thanks to a crystal on my kitchen window sill) You may already have come across these delicious breakfast cookies but thought: "hey, where's the good stuff? The sugar? The eggs? The fat?"  Well, the good stuff is all in the ingredients-- this is a whole food recipe which means we aren't using derivatives, we're using the real food, and it doesn't need to be gussied up with animal products to have incredible mouth appeal (that is what fatty, sugary, salty, custard-y textures and tastes contribute).  So, I say, try 'em and if you're disappointed, well, add some of the other ingredients... COOKIE INGREDIENTS (all organic and non-GMO) 3 well-mashed Bananas 1 C. Old-Fashioned Oat Flakes 1/4 C. Chia Seed Gel You can go with these 3-- pretty delicious by all counts-- or you can add in one or several of the following: 1/4 C. chopped Nuts (I like pecans) or Seeds 1/4 C. unsweetenened Coconut shre

Make Your Own Seed Mats (for Tiny Seeds)

This year I am excited to be trying a new technique (or me) for carrot planting... I am going to make my own seeding mats ! Have you ever planted carrots and either been overwhelmed by all the seeds that burst through in one spot, making it difficult to thin them without pulling up too many, or just feeling how wasteful it is to be aborting all those potential wonderful carrots? PLANTING CARROT SEEDS IS THE HARDEST PART OF GROWING CARROTS Carrot seeds are teeny-tiny.  It is difficult to see them when you plant and because they are so light you will sometimes find them flying about willy-nilly.  Here are some methods you can use to lessen these frustrations: Buy " pelleted seeds "-- these are various tiny seeds with a clay coating that make them easier to see and work with.  The coating needs to be kept moist during the planting process and eventually falls away.  They are fairly pricey ($6+ for 100 seeds).  Order HERE . Buy Seed Mats or strips.  T

Organic Borscht with Basil, Red Lentils and Purple Cabbage (Vegan, Gluten-Free)

Delicious & Fragrant Organic Borscht with Basil, Red Lentils, and Purple Cabbage I was at Costco today and saw a 2-4 servings package of ready-made beet borscht for ... are you ready?... $12+ change!!!!!  I knew I had beets at home in the fridge (thanks to that wonderful organic-vegetable-growing son of mine who harvested close to 3000# of beets this Fall!) and I DO know how to make borscht, so I could hardly wait to get home to make such a valuable-- and delicious of course-- soup. And this borscht I am making is ORGANIC, it does not have any GMO possibilities, or high fructose corn syrup lacings.  This recipe will feed 5 people... so, I guess it must be worth about $25?  You can make it too: Ingredients : 2 Tbs. Coconut Oil *4 small Onions , halved and sliced (3 cups) *1 T. organic dried whole Basil *2 tsp. Celtic Sea Salt *6 cloves Garlic , minced *3 medium Beets , peeled and grated, or pulsed until fine in Food Processor *Greens from beets (or bunch of Swiss Char

Baked Tofu and Spanish Rice- the PERFECT supper!

Fragrant, toothsome baked tofu and spanish rice!  This combination recipe might have been in Frances Moore Lappe's 1971 "Diet for a Small Planet" but if it was, it likely included some cheese and olive oil.  This particular recipe is LOW fat..... way low......... like, the only fat in this recipe is in the tofu and veggies!  But the flavour....... (oui oui... in Canada we use the tasty French way of spelling flavoUr)........ wow! And next to the taste is the fragrance of the marinade-covered tofu as it bakes!  Oh yum yum yum- But on with the recipes!! SPANISH RICE (6-8 servings) Ingredients: 2 cups cooked  Rice  1 red Onion , chopped 1 C. chopped Broccoli , fresh or frozen 3 Garlic cloves , crushed   1 C. Water  1 C. organic vegetarian Pasta Sauce (or 6 oz. Tomato Paste) Sal t, to taste Cook the rice according to directions, or as you normally do In a wok, or large pot, combine the onion, broccoli, garlic and water, and bring to a boil, then s

Pumpkin Pie Porridge (Gluten-Free, Vegan)

I love pumpkin pie and could eat it any day any time, but the fact is that pumpkin pie is generally pretty much off my dietary radar what with the custardy ingredients and pie crust.  So, how nice to know that there is a ' pumpkin pie "fix" that is healthy, vegan, gluten-free and a great breakfast item full of Vitamins A, B and fibre!  I have also included the recipe for Pumpkin Pie Spice, a mixture you can make it bulk and then just add a spoonful to your future pumpkin porridge pie recipes.  Make your own with organic spices.   The spices will help to keep your LDL and triglycerides at normal levels. Pumpkin Pie Spice Mix Ingredients: (for one pumpkin pie porridge recipe below)  1/2 teaspoon ground Cinnamon   1/4 teaspoons ground Ginger 1/8 teaspoon ground Nutmeg   1/8 teaspoon ground Allspice   1/2 teaspoon organic Stevia powder  Preparation: Combine all ingredients. If you make extra, store in an airtight container. Pumpkin Pie Porridge

Blueberry-Carob Macaroon Oatmeal Porridge (Gluten-Free, Vegan)

When I asked my husband what he wanted for breakfast this morning, he said, "Well, seems like you're on a roll with those porridge recipes". Aha. So, a new recipe needed today. And thus, thanks to Google, here is my take on a carob-blueberry pudding porridge.  It's a little fussier in the making, but well-worth it (fussier in that it needs to be done in a couple of steps vs. just throwing everything together in a pot from the get-go). It smells soooo yummy as it cooks-- remember that chocolate was once known as "the poor man's carob".   This porridge will meet all your chocolate cravings, but with wonderful nutrients and none of the stimulants of  caffeine or theobromine found in chocolate.   Remember to use Gluten-Free Oats if you are sensitive to gluten and wheat. Ingredients: 1 C.     Steel Cut Oats 1/2 tsp. Salt  1/4 C.   Chia seed 1/2 C.  Coconut shreds 3 C.     Water 1/2 C.  Carob powder 1/4 C.  Fairtrade Raw Cane Sugar (I use Who

No Need to Fret with No-Knead Bread!

Do you, or someone in your household, bake this fragrant, hearty, genuine crusty bread?  The particular loaf above is a rye bread with caraway seeds in it.  It has a crispy, crunchy crust and a hole-y crumb (inside of the bread).  I baked it using the fantastic recipe and videos from Breadtopia AND my brand new favourite tool (read: kitchen toy) called LaCloche (you can see it in the background.)  It's a stoneware, or clay (or you can use enameled cast iron) "baker" that comes in two parts: a baking 'pan' base (more like a cake pan in shape) and a heavy lid. Available from Amazon. Click Above. The LaCloche simulates baking your bread in a clay oven (the highlight of Pioneer Days in Saskatoon, Saskatchewan was the delicious bread the Hutterites baked in an earthen/clay oven behind their booth). This rye bread is no-knead... that means you don't thump and knead it as part of the process.  It's made with quite a lot of water, and allowed to rise

Upside-Down Vegan Banana Cake

So, I made this delicious Upside Down Banana Cake adapting a recipe from the blog US Masala I saw on Pinterest -- dee-lish-us!  I did lots of substitutions to the original, but I'm sure it tasted just as good, but not better.  This is a great way to use up 3 or 4 over-ripe bananas.  I made fresh apple sauce in my Vitamix, but you can, of course, use the ready-made stuff.  And I used both coconut oil instead of butter and coconut oil (melted) instead of the oil called for in the original recipe.  AND, I made full use of my food processor, as usual.  But other than that, well, it could be the same recipe. INGREDIENTS: For the Upside-Down Layer: 3 ripe bananas, cut in 1/2" pieces 1/4 C. Brown Sugar 3 T. Melted Coconut Oil For the Cake: 1 C. Unbleached Flour  (or sub 1 1/2 C. GF mix for this and the tapioca starch) 1/2 C. Tapioca Starch 1 tsp. Baking Powder 1 tsp. Baking Soda 1/4 tsp. Sea Salt 1/2 - 1 tsp. Organic Cinnamon 5 T. Coconut Sugar 1 tsp. Vanilla (

Bushels of Salads...

Every Girl Should Know How To Make A Salad I have had a lovely summer... and lots of great salads! Above is a picture of my 6-year old granddaughter making a salad -- what I want her to be skilled at in the kitchen, actually.  In my day it was an omelet.  But we vegans have different ideas about what is appropriate! If you want to see a pile of excellent salad recipes why not go to my Pinterest Salad Board and 'follow' it?  There are great recipes for salads on there right now, and a bunch more to come!  You could have a different salad every day of the year...wow! (Keep them organic of course!)

Eliminating Inflammation by Eliminating Wheat, Sugar, Dairy

Toes inflamed with chilblains (Wikipedia) Inflammation -- the starting point for most chronic and terminal disease.  That sore spot or achey gut is quite likely inflamed tissue...  I recall from a hydrotherapy demo one time learning that inFLAMmation (read: flame; heat; fire) can be cooled with ice (as in the case of a hot, sore joint, back ache, a burn, or a stinging sensation) or with drinking water (as in the case of a stomach ache or a sore, inflamed throat).  Heart attack and cancer start with inflammation. I am going to do three things to eliminate inflammation in my body, three things that I currently do right now but that I know don't work well for me.... I am already vegetarian/vegan/sometimes raw vegan, but these are three areas where I transgress and that usually results in weight gain (another indication of inflammation) and edema for me.  The three things that promote inflammation in some people that I will cut out of my life are: narrowing of the  esophag
