Overnight Blueberry-Chia Pudding Pie Oats

  This delicious chia seed pudding is made the night before (takes about 5 minutes after you assemble the ingredients) and popped in the fridge for breakfast. This particular pudding includes both non-dairy milk AND non-dairy yogurt (usually coconut, bought or home-made).  It is extra creamy! It really does taste like blueberry pie-- it even has a sprinkle of oats and maybe some almond crumbs or hempseeds as a 'crust'.  The chia seeds soak overnight, so there is no danger of coming across a hard one. Be sure to mix everything well before adding the oat topping and lid and popping in the fridge. This recipe makes 3 to 6 servings, depending on how big your servings are. This is a super high fibre pudding, so be sure to drink some water before and throughout the morning. Blueberry Nice Cream on Raspberry Chia Pudding If you follow the recipes on Organic Granny (you can do that on this site itself, or by joining the group on Facebook called Organic Granny Veggie Recipes ) you will know that I have a longstanding relationship with chia seeds .  These high protein, high omega3 tiny seeds just happen to be the base for many of my dessert recipes-- either as a primary content or as a binder-- and some other recipes as well.  I sometimes make up something called Chia Gel-- basically, chia seeds gelled in water-- and keep it on hand in a mason jar in the fridge.  I often use the gel as a base for the puddings.  You can find out more about the chia gel and how to use it HERE .  Find more recipes at the base of this recipe post. Good Summer Morning Chia Pudding

Here is a fast and easy Chia Pudding that is perfect for breakfast (or as dessert, etc etc etc).  Chia pudd fans will know what I mean...  .                               . The Recipe is pretty simple.  You can vary it as you like, but this combination is a winner at our home and I think we will continue to use this as a standard for a simple breakfast pudding. I start by gathering together the ingredients and a wide-mouth Mason Jar with a lid. The ingredients are: 1/4 C. Chia Seed 1/4 C . Liquid Honey (or other sweetener of choice) 1/2 tspn. Vanilla Extract 2 C. Soy Milk (or other non-dairy milk) Strawberries and Blueberries (or other fruit/berry combinations ) as you like            THE METHOD Put all the above ingredients (in order) into a quart-size Mason Jar Whisk ingredients together until thoroughly mixed, paying attention to bottom sticky seeds
