How To Make Quinoa and Sun-Roasted Soy Curl Chickn in a Solar Oven

I am sorry for complaining about the blue skies and sunshine when some of you read my woes about our long Winter and Spring with low temps and lots of rain (even some snow that stayed around). (Well, after you've paid for the oven-- you'd have to do the Math for that). Keeps your kitchen cool. Keeps the rest of the house cooler. Good for the environment. Excellent when you are off the grid on a fishing trip or on a research assignment or just like using your backyard for something besides the garden and the selfies with the flowers. And the food cooks just right, there is NO burning-- you might experience a little food dryness when you are getting used to

Butternut Squash- Quinoa Salad

  We enjoyed this glorious salad on Christmas Eve.   It started out as a "bowl" in that the roasted butternut squash and quinoa were still hot when we added them in.  The next day we ate it as a more traditional salad cold from the fridge. Either way, the textures and flavours come together very nicely-- it is flavourful, yummy and filling while low-fat with no added refined sugar.  It is also vegan and gluten-free. Zucchini-Mushroom Quinoto

  This delicious plant-based grain and veggie mix is called a quinoto because it is like a risotto, but with quinoa instead of rice! INGREDIENTS : Serves 3-6 1-2 T. olive oil 1 onion, chopped 5 large Crimini or Baby Bella mushrooms, sliced 2 medium or 1 large zucchini, chopped large handful chard, chopped 2 T. poultry seasoning 1/2 cup + hot water 2 T. basalmic vinegar salt and pepper Violife moźerella cheese shreds Basil leaves to garnish. METHOD : In hot oil, on medium heat. cook, stirring, the mushrooms, onions, and zucchini Add in poultry seasoning and stir through Turn down temperature to low. Add water to a pool in middle of pan and add quinoa, stirring to stimulate cooking. Continue to stir as quinoa cooks.  Add small additional amounts of water to maintain cooking and prevent sticking. Lovely lemon-y Carrot-Lemon Soup This recipe for Carrot-Lemon soup was inspired by a Greek soup recipe.  When I was a kid, almost every local upscale eatery-- what we labeled "fancy restaurant" --was operated by Greeks who had emigrated to my town or city from the Old Country.   We all learned what was in a 'Greek salad' and were quite fond of the way seemingly all the Greek dishes were enrobed in melted mozzarella.  I realize now that the restaurateurs probably quickly tumbled to the fact that Canadian prairie people were dazzled by melted cheese, and they accommodated us.  And we-- or at least, I-- really loved the lemon rice soup that generally preceded a hearty meal of mozza-covered whatever.   But try as I did, I could never quite achieve that tangy citrus flavour... until now. Rice Pasta with Cauliflower Sauce

This delectable garlicky cauliflower sauce over organic rice spaghetti was a most delightful supper one evening at the beginning of the COVID-19 dilemma. It has a lovely creamy mouth appeal but because it has no actual cheese or dairy fat of any kind (only fat would be in the almond milk) it settles lightly on the digestion. Perfect for an evening meal. INGREDIENTS: Large head of cauliflower, broken into florettes with leaves and stem end removed 1 onion, chopped 4 garlic cloves, minced 1 1/2 cups almond milk (unsweetened) 2 tsp. lemon juice, fresh squeezed 1 tsp. fine sea salt black pepper, fresh ground, as desired 4 T. chopped parsley as garnish full box of rice spaghetti (28 oz) or quinoa, rice, etc. Steam the cauliflower over a pot of boiling water, covered, for about 5 - 10 minutes, or in Instant Pot. This Veggie Tofu Stroganoff really hits the vegan spot on a sunny, snow-y day-- or for a summer supper-- well, for anytime, really! Oh, Mama, this is soooo delicious! Here are the ingredients (with suggestions for subs):   INGREDIENTS FOR 4-6 PEOPLE/ VEGGIE TOFU STROGANOFF Extra Firm Organic Non-GMO Tofu Block (16 ounces/ 450 g) 3 T. Organic Soy Sauce (Tamari) (could be GlutenFree) 1 Organic Garlic Clove, Minced or Grated 1 T. Vegetable Oil (or 1/4 C. Water if on Oil-Free Diet) 2 C. Chopped Red Onions 1 Large Bunch of Fresh Organic Chard, Stems Chopped Separate/Leaves Chopped 1/2 tsp. Salt 1 tsp. Hungarian Smoked Paprika (or ground mild Chipotle) 2 C. Peeled and Sliced Carrots 2 C. Mushrooms, Cleaned and Sliced (I used Baby Bella) 1/2 C. Dilute Apple Cider Vinegar (about 1/3 Vinegar/ 2/3Water) or 1/2 C. Dry Red Wine 1 1/2 C. Organic Tomato-Basil Pasta Sauce (Good deals at Walmart & Costco) 1- 2 C. Organic Quinoa (I used the Mixed Colors) 1/2 C. to 1 Cup Al

Lentil Bowl #4: Savory Middle East Lentil Stew

Savoury Middle East Lentil Stew This is a quick-to-put-together comfort food for cool winter days or nights, as long as you have the Quinoa (or Rice) and Red Lentils pre-cooked.  A green salad and a piece of fresh flat bread will round it out nicely.  I've made it a little more "world" foodie than actual Middle Eastern, but you can always sub Brown Rice for the Quinoa and Cayenne and Paprika for the Chipotle (I just love the smoky hot quality of Chipotle if you are wondering why it turns up in so many recipes).  I also use Coconut Oil instead of Olive Oil, but please use what you have available, or what you prefer.  If you have other veggies that you would like to saute up with the onions (bell peppers, egg plant, minced garlic), go ahead!  Enjoy!
