Lemon-Coconut Oatmeal Porridge (Sugar-Free, No Poured Oils, Plant-Strong, Vegan)

Recently I was at a social function where I found myself hanging over the dessert table and "sampling" more than one delicious Lemon-Coconut Square.  In my opinion, these "dainties" (what sugar-y confections at "Teas" were called in my youth) are the creme-de-la-creme of the dessert table.

But.... as much as I enjoyed them, I felt like a huge fraud, since (1)I am working to lose inches and (2)I profess to be vegan.  The eggs, fat and sugar in these Lemon-Coconut Squares are not dangerous in moderation, but if you eat 3 squares/bars, you are taking in something like 30 g of fat (saturated and unsaturated), as well as 450 calories of energy.

So, I went searching for a recipe that would allow me to enjoy the essence of this lovely dessert, while being low in fat and calories, and higher in nutritional benefits.

Voila!  The Lemon-Coconut Porridge Recipe was born-- or REBORN maybe, in a vegan form.

Start by making a fabulous VEGAN LEMON CURD (i.e, no eggs)

INGREDIENTS (in your vitamix carafe, or other blender carafe):

  • 3 small organic lemons- will fill a measuring cup, chopped and seeded with skin still on (scrub up in advance)
  • 2 T. Organic Yellow Corn Flour/Starch (or Arrowroot or Tapioca Starch)
  • 3/4 teaspoon Stevia Powder (I use Truvia) or other sweetener to your taste
  • 1 C. Non-Dairy Milk (I used Almond, but Coconut would be delicious)
  • Pinch of Salt
  • 1/8 teaspoon Turmeric (Optional: for the Yellow Color)
Blend Well.

Pour into a medium pot on the stove and whisk over medium high heat until the curd thickens (curdles?).  It happens VERY FAST so don't wander away, if at all possible.

Pour into small mason jars and let cool.

Spoon the yummy (but tart) Lemon Curd over a lovely bowl of steel cut oats and sprinkle on as much coconut shred (I use raw, organic) as you desire.  Eat.  Love.

Alternate Lemon Pie Oats Recipe

Using the same ingredient list above, but substituting 1 cup of water and 1+ tablespoon of Simply Organic Lemon Flavoring (order bulk here if you are a fan of lemon recipes) for the lemons, I began to cook the oats in water.

I combined the corn starch, turmeric, sweetener, and salt and added them to the boiling porridge, stirring, to the oats as the sauce began to boil and thicken.as part of the porridge. I added the lemon flavoring here as well.

When added and stirred for about 1 minute, I removed the porridge from the stove. I dished the oats into 2 bowls and added berries and a few vegan chocolate chips and the mylk.

The Lemon-Garlic Mixture Recipe that Chris Wark (Chris Beat Cancer) Recommends

My husband and I are both over 70, and while we have the odd age-expected ache or pain or fallen hair or swollen ankles or whatever, we have avoided many of the BIG Diseases: Heart Disease, Diabetes, High Blood Pressure, Arthritis, Cancer-- but we have had family with these diseases and there is a good chance that we will have something like this hit at some time.  That is the way of the world these days, is it not? So, to be proactive and preventative, we believe that "Food is Our Medicine" and we adhere to a Whole Food/Plant-Based way of eating. We also watch a lot of those health seminars that mesh with our way of thinking that plants/herbs are the answer-- or at least our first rule of order when we feel ill.  We loved the Chris Beat Cancer series because, well, who wouldn't?  Chris is a charming young man with a friendly, compassionate mission to help others learn about how they too can beat cancer without (or only as a sideline) chemo or radiation.  In his Square

Unveiling the Truth: A Critical Review of The Way - 2X2s and Church With No Name

Recently I was struck by a newspaper article about a woman in her 40s, Lyndell Montgomery, who had been part of the religious sect called 2 X 2 s or "The Way" or even "The Church with No Name".  Montgomery had recently charged a leader/ministering member of the 2x2s with child sexual abuse that happened when she was 14. She lives on the Island that we live on (maybe even in our community). I am interested in the diversity of memoirs by people who were spiritually abused. And I have some scattered recollections of knowing people who were part of this particular sect.  I have a blog page listing more than 25 books that I have read about spiritual abuse .  In the eye-opening little book, shown above, we delve into the dark reality of spiritual abuse within "The Way," an enigmatic organization also known as 2X2s or Church Without A Name. Through research and firsthand accounts, the book exposes the damaging effects of spiritual manipulation within The Way. R
