Lemon-Coconut Oatmeal Porridge (Sugar-Free, No Poured Oils, Plant-Strong, Vegan)

Recently I was at a social function where I found myself hanging over the dessert table and "sampling" more than one delicious Lemon-Coconut Square.  In my opinion, these "dainties" (what sugar-y confections at "Teas" were called in my youth) are the creme-de-la-creme of the dessert table.

But.... as much as I enjoyed them, I felt like a huge fraud, since (1)I am working to lose inches and (2)I profess to be vegan.  The eggs, fat and sugar in these Lemon-Coconut Squares are not dangerous in moderation, but if you eat 3 squares/bars, you are taking in something like 30 g of fat (saturated and unsaturated), as well as 450 calories of energy.

So, I went searching for a recipe that would allow me to enjoy the essence of this lovely dessert, while being low in fat and calories, and higher in nutritional benefits.

Voila!  The Lemon-Coconut Porridge Recipe was born-- or REBORN maybe, in a vegan form.

Start by making a fabulous VEGAN LEMON CURD (i.e, no eggs)

INGREDIENTS (in your vitamix carafe, or other blender carafe):

  • 3 small organic lemons- will fill a measuring cup, chopped and seeded with skin still on (scrub up in advance)
  • 2 T. Organic Yellow Corn Flour/Starch (or Arrowroot or Tapioca Starch)
  • 3/4 teaspoon Stevia Powder (I use Truvia) or other sweetener to your taste
  • 1 C. Non-Dairy Milk (I used Almond, but Coconut would be delicious)
  • Pinch of Salt
  • 1/8 teaspoon Turmeric (Optional: for the Yellow Color)
Blend Well.

Pour into a medium pot on the stove and whisk over medium high heat until the curd thickens (curdles?).  It happens VERY FAST so don't wander away, if at all possible.

Pour into small mason jars and let cool.

Spoon the yummy (but tart) Lemon Curd over a lovely bowl of steel cut oats and sprinkle on as much coconut shred (I use raw, organic) as you desire.  Eat.  Love.

Alternate Lemon Pie Oats Recipe

Using the same ingredient list above, but substituting 1 cup of water and 1+ tablespoon of Simply Organic Lemon Flavoring (order bulk here if you are a fan of lemon recipes) for the lemons, I began to cook the oats in water.

I combined the corn starch, turmeric, sweetener, and salt and added them to the boiling porridge, stirring, to the oats as the sauce began to boil and thicken.as part of the porridge. I added the lemon flavoring here as well.

When added and stirred for about 1 minute, I removed the porridge from the stove. I dished the oats into 2 bowls and added berries and a few vegan chocolate chips and the mylk.

Spunky Monkey DIY Vegan Chocolate-Chia Ice Cream

Vegan, plant-based, and 100% delicious! This creamy homemade ice cream will win over everyone— no politics, just pure joy. Vegan and Delicious: Everyone Will Love This! Sometimes the word "vegan" evokes strong feelings like anxiety (as in "Please don't take away my meat") and/or hostility (as in "What a bunch of commie flakes all vegans are"). There are probably good reasons for both of these passionate emotions because we frequently come across strident, fear-mongering diatribes online blasting us from the ivory towers of the most raging animal-freedom activist or the highly evangelistic plant-based health advocate. "Plant-based" is an alternate description for a lifestyle choice to eat from the array of fruit, greens, vegetables, nuts, and seeds. Using the term "plant-based" instead of "vegan" may be less intimidating. It even sounds like, although the diet has a plant-based foundation, it possibly includes meat and eggs...

G7 2025: Why It Matters

57th G7 Summit- Wikipedia commons. What is the G7? 🤝 The Group of Seven (G7) is a forum of seven wealthy, democratic nations: Canada, the United States, the United Kingdom, France, Germany, Italy, and Japan, along with the European Union . It started in 1975 as the G6 to coordinate responses to global economic shocks like inflation and oil shortages. Canada joined in 1976 to form the G7(1). Russia was briefly part of the group (making it the G8), but was expelled in 2014 after invading Crimea (2). How Does It Work? The G7 is informal — there’s no permanent office, headquarters, or constitution . One country hosts the summit each year and sets the agenda. Leadership rotates annually among the member countries in a fixed order (3). The summit itself is usually a 3-day event where world leaders meet in private for discussions, photo ops, and joint statements (although this year’s format is changing — more on that later). What’s the Point? The G7’s original mission was to tackl...
